The choice of gas depends on your equipment, the frequency of use and the seasonality of your business. Three types of gas are used in food trucks: butane, propane and LPG (a mixture of the two).
Propane is the most versatile: it remains efficient down to -40°C, making it ideal for outdoor and winter cooking. It costs a little more, but its performance is more consistent, especially outdoors.
Butane is more suitable for indoor use in mild weather, but it freezes as soon as 0°C, which can block your appliances in the cold season. It is often less expensive to buy.
