  • Duration: 20 hours (3 days) for a first application, 6 hours for a renewal ;
  • Cost: Between 300€ and 600€;
  • Validity: 10 years ;

This course covers the regulations governing the sale of alcohol, the prevention of public drunkenness, the protection of minors and the responsibilities of the owner. You will then obtain your license III (sale of beverages up to 18°) or IV (all types of alcohol).

Carte de commerçant ambulant : To do business outside your commune

As soon as you want to set up your food truck outside your home town, this card becomes essential.

  • Duration: No training required, but administrative procedures ;
  • Cost: €30 ;
  • Validity: 4 years ;

To apply, contact your local Chamber of Commerce and Industry (CCI). Although not a training course in the strict sense of the term, this card gives you access to markets, festivals and events throughout France.

These amounts may seem high, but in relation to the potential sales of a food truck (between €150,000 and €300,000 per year for a well-run business), the training investment represents less than 1% of your annual sales.

Good news: some training courses can be paid for by your OPCO (Opérateur de Compétences) if you are an employee undergoing retraining, or by Pôle Emploi if you are planning to set up your own business.

For HACCP training

Criteria to check:

  • DRAAF (Direction Régionale de l’Alimentation, de l’Agriculture et de la Forêt) approval;
  • Modules specific to mobile catering ;
  • Online or face-to-face training available
  • Teaching aids provided;

Recommended organizations :

  • Chambre de Commerce et d’Industrie (CCI) (Chamber of Commerce and Industry): quality training, controlled rates, nationwide presence
  • Chambre des Métiers et de l’Artisanat (CMA): Practical approach, experienced trainers
  • UMIH Formation : Specialized in the hospitality industry, modules adapted to food trucks

For operating permits

Choose organizations approved by the French Ministry of the Interior. CCIs and CMAs generally offer these courses, but you can also turn to specialist organizations such as SHPE Formation or Permis Exploitation.

Online vs. classroom training

Since 2020, HACCP training can be done entirely online. It’s convenient and often less expensive, but be careful to choose a serious organization. Face-to-face training is still recommended for practical aspects (food handling, equipment cleaning).

For the operating license, face-to-face training is compulsory for the initial 20 hours of training. Only renewals can be done online.

Mistake 1: Postponing training courses

“I’ll train once I’ve got my truck.” Bad idea! Training courses take time to organize, and you risk delaying your opening. Plan for them as early as the design phase of your project.

The cheapest training is not necessarily the best. An organization that offers HACCP for €150 is probably overlooking certain essential aspects. Invest in quality.

Mistake 4: Forgetting to update your knowledge

As regulations evolve, so do techniques. Set aside an annual training budget to keep up to date. HACCP refresher training every 3-5 years is strongly recommended.

Mistake 5: Training just one person

If you work in a team, train at least two people in the basics of food hygiene. In the event of absence or departure, you won’t be stuck.

Can I open a food truck without any training?

No, it’s not legally possible. HACCP training is mandatory for at least one member of your team. Without this training, you risk fines and the administrative closure of your establishment. What’s more, if you sell alcohol, you’ll also need a business license.

Allow at least 2 months before your scheduled opening. HACCP and business license training sessions are not held every week, and you may have to wait several weeks to get a place. Add to this the time it takes to obtain an itinerant merchant’s card (2 to 4 weeks), and you understand the importance of thinking ahead.

For theory, yes! Online HACCP training can be very well designed, with interactive modules and quizzes. However, there’s no substitute for hands-on experience in certain areas, such as food handling and thermometer use. A mixed format is ideal: online theory and face-to-face practice.

Your liquor license lapses, and you must stop selling alcoholic beverages immediately. To get your license back, you’ll have to take the full 20-hour training course (and not just the 6-hour refresher course). So it’s best to plan ahead for renewal!

Absolutely! Professional training costs are deductible from your taxable profits. Keep all your training invoices in a safe place. If you’re setting up a new business, these expenses can be included in your start-up costs.
